  • 2 cups Cooked Corned Beef diced
  • 4 cups Potatoes peeled and diced
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 1 cup Cheddar Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the diced corned beef, potatoes, onion, and bell pepper.
  3. Add the olive oil, salt, and black pepper. Mix well to combine.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the top is golden brown.
  6. Sprinkle the shredded cheddar cheese on top and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
