Ingredients 

Carrot Fries

  • 6 large carrots peeled and cut into sticks
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Yogurt Sunflower Seed Butter Dip

  • ½ cup Greek yogurt
  • 2 tablespoon sunflower seed butter
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon honey
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss carrot sticks with olive oil, salt, and black pepper.
  3. Spread carrots in a single layer on a baking sheet.
  4. Bake for 25 minutes, turning halfway through, until golden and crispy.
  5. While carrots are baking, mix Greek yogurt, sunflower seed butter, lemon juice, honey, and salt in a bowl until smooth.
  6. Serve carrot fries with the yogurt sunflower seed butter dip.
