Main Ingredients
- 2 Eggs
- 1 cup Baby spinach fresh
- 1 tablespoon Olive oil
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. In a mixing bowl, whisk the eggs with a pinch of salt and black pepper.
2. Heat the olive oil in a non-stick skillet over medium heat.
3. Add the baby spinach to the skillet and cook until wilted, about 2 minutes.
4. Pour the beaten eggs over the spinach and cook until the eggs are set, about 5 minutes.
5. Fold the omelet in half and serve hot.
