Ingredients

  • 1 bunch Asparagus trimmed and cut into 1-inch pieces
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 1 cup Vegetable broth
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Lemon zest
  • 1 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add asparagus pieces and cook for 3-4 minutes until they start to soften.
  4. Pour in the vegetable broth and bring to a simmer. Cook for another 5-7 minutes until asparagus is tender.
  5. Stir in lemon juice, lemon zest, and butter. Season with salt and pepper to taste.
  6. Remove from heat and blend the sauce until smooth using an immersion blender or regular blender.
  7. Serve warm over your favorite dishes.
